Every week I meal prep and always try to come up with something fun and delicious that I will enjoy and look forward to eating. This week instead of making my usual batch of lean turkey meatballs I turned the mixture into two large meat loaves and it came out amazing! This made for a great lunch paired with a half of an avacado (good fats) and some shredded Organic Valley mexican cheese sprinkled on top. This was a great way to mix up my lean turkey routine without getting bored! This was also fairly easy to make but did take some time to cook all the way through because it is much thicker than a meatball.
What you will need:
– 2 packages of natural Butterball lean ground turkey meat
– Walden Farms ketchup
– Classic yellow mustard
– liquid or regular egg whites (1 egg or 3 tbsp)
– hand full of organic oats
– spices (I use cayenne pepper, Mrs. Dash and some cracked pepper)
– 1/8 cup of organic low sodium vegetable broth
– chopped onion (white or yellow)
– peas and carrots
– avacado to add on top
How to make:
It is beyond easy! Mix everything into the mixing bowl.
Use your hands and kneed the ingredients all together.
Take a baking tray and coat with organic extra virgin olive oil spray.
Preheat oven to 400 degrees.
Take 2 large loafs and mold them into the shape below.
Coat the top with a bit of seasoning.
Put into the oven and let bake for at least 35-45 minutes or until the outside is slightly crispy.
Take the tray out and cut in the middle to check that it is cooked all the way through.
Eat and enjoy!
This will give you a great amount of protein without a ton of carbs and with the avacado on top it also adds some good fat into your meal. I cut this up into slices and then just mash it up into a container of tupperware, voila!
