A classic burger meets healthy ingredients for this high protein, low carb spinach/cheese/chicken patty.
Today’s recipe is in preparation of my weekly meal prep and this time I wanted to turn my lean ground turkey from Whole Foods into something unique, tasty and healthy. I bought 1 package of their lean ground chicken, a bag of organic frozen spinach and their raw milk gargonzola cheese. The cheese and the spinach paired with the lean ground chicken taste amazing! The goal is to make the mix and then freeze the extra patties or turn the entire mix into meatballs. However you decide to cook them they are delicious and a high protein meal.
Buy one package (or two if you want to double the recipe) of lean ground chicken. Always look for meats that don’t use antibiotics and are natural. I like getting this one from whole foods and trust their meats.
This cheese was a random find during my shopping trip and I love that it uses raw milk and is vegetarian. Gorgonzola is one of my favorite cheeses and it pairs really well in this recipe. This is also great to have on hand to use in salads or vegetable/rice pilaf.
For spinach I used a frozen organic bag and just popped it into the microwave for a few to soften it up to mix easily. Normally I would prefer fresh spinach but I forgot to get it on this trip.
For seasonings I just used the McCormick Italian Herbs seasoning which has no MSG.
As you can see the gorgonzola cheese comes in crumbs so use a fork to break the larger pieces up.
Add the package of ground chicken, 1/2 cup of the cheese and about 1 and 1/2 cup of spinach and use your hands to mix together.
Grab the mixture and turn into patties, flatten on a olive oil sprayed pan and then get ready to bake.
I baked these on 400 degrees for 20 minutes. Then I took them out of the oven and put them on a non stick pan to brown the outsides for about 10 minutes.
I wanted to get the outside a little crispy, but you can skip this step if you prefer.
When they are done lay them out on a paper towel lined plate to absorb any of the extra juice or fat that come after they are cooked. Then you are ready to eat and enjoy!
