Healthy Dinner Recipe: Crab Meat Stuffed Salmon, Asparagus and Sugar Snap Peas

A healthy dinner option for your next meal: Salmon & lots of green veggies!

A well balanced dinner includes a lean protein source and vegetables. This dinner is low carb since some days I have already met my carbohydrate macros by the end of the day so tonight’s dinner focused on a lean piece of fish (salmon) stuffed with some crab meat, some sugar snap peas (vegetable) and asparagus spears (vegetable). Overall this dinner took about 40 minutes to make since most of the time was baking the asparagus and fish in the oven. I picked up the salmon stuffed with crab meat at the seafood counter at my local grocery store and it was prepared fresh. I brought it home and seasoned it and popped it in the oven at 375 degrees for about 25 minutes

I love making salmon because it is high in protein and good healthy fats. Crab meat is a nice touch to the fish since it is a bit more savory and the seasonings require no marinade or other additions. Just line your baking tray with some olive oil or coconut oil and you are good to go.

Asparagus is always a quick and easy vegetable to add to any dish. I line the tray with some olive oil and then drizzle it on the spears as well. Make sure to cut the bottom of the stem and roll the spears so they get covered with the oil. I then sprinkle on some Mrs. Dash for flavor and put these in the oven as well.

For the sugar snap peas I add them to a medium heat skillet and used some Asian seasoning marinade that was low sodium. This adds a nice flavor to the peas as well as make them much softer once cooked. Cover the skillet and let it sit on a low heat until everything else is ready to go.

Make sure to portion out your food accordingly to your goals. As you can see the one on the left is for me (4 ounces of salmon) versus my fiance who goes for 8-10 ounces. Typically my meals are half the size of his on average. This filled me up and then some!

This dish is really tasty and has lots of flavor with out a ton of calories. When I plugged this into MyFitnessPal my portion was roughly 350 calories which is not bad at all! I also enjoyed this with a nice glass or red wine to end the day and relax while enjoying my meal.
