A new take on brussel sprouts – recipe from Skinny Taste Brussel Sprouts Gratin

If brussel sprouts are not your first choice for a green vegetable, you may want to try this recipe

As kids we probably loathed the idea of brussel sprouts. They look like tiny green brains (yes I called them that as a child too!) and nothing about them was appealing. From the taste to the texture to the lack of seasonings they were made with, they repulsed me. Little did I know how nutritious they were or how good they COULD taste, if only I had them made a different way. Hence this great recipe I found in the Skinny Taste cook book which I just ordered for myself from Amazon and looooovvveeee! So this weekend I made Gina Homolka’s version of Brussle Sprouts Gratin – a new take on brussel sprouts that will have you begging for seconds! First thing you need to do is wash your brussel sprouts with luke warm water and spread out on a tray or baking sheet. I buy mine already cut from the branch but they come in wholes so I cut them in half. You will need the following items and amounts for the below (I removed a few items from the original recipe like shallots, thyme and the cheese but I swapped for the items below):

Ingredients:

  • 16 oz brussels sprouts, trimmed of outer leaves and sliced in half
  • sea salt
  • black pepper
  • olive oil spray
  • Mrs. Dash Italian seasoning
  • 2 tsp whole wheat flour
  • 3/4 cup fat free milk
  • 1/4 tsp kosher salt
  • 1 tbsp grated Parmesan cheese
  • Top with shredded low fat mozzarella cheese
  • Organic olive oil spray

Once you have your brussel sprouts cut and dried make sure to get a baking dish or casserole dish and heat your oven to 400 degrees. Spray your tray with olive oil and then add your brussel sprouts. Drizzle some olive oil on top with some salt and pepper and mix around to coat it all real good. Once the oven is ready you will pop them in for 15 minutes.

_MG_9614When they come out you will mix everything around again and begin your mix on the stove top. You will add the whole wheat flour, milk,and Parmesan cheese to a small skillet on the stove top and whisk around until warm.  I also added some Mrs. Dash italian seasonings as well.

_MG_9618Now you will drizzle this on top of the brussel sprouts and then top with mozzarella cheese. Make sure this coats all of the sprouts and is spread evenly. You will then pop them back in the oven for another 15 minutes. Make sure to use a timer on your stove so you don’t overcook them.

One they come out they should be nice and melted and ready to enjoy. I find these taste delicious and I used them today for my lunch at work! They reheat very well in the microwave also. If you have picky eaters in your house try this recipe on them and see if they have a new found love of brussel sprouts like I do.
