Recipe: Lean Turkey and Beef Meatballs

Sunday is always a great day to make a batch of meatballs, but if you are looking for a healthier version keep reading. It all starts with the meats you use, the ingredients and eliminating some items you really don’t need. These meatballs are great both hot or cold, so they make for quick snacks or an in between meal when you are pressed for time. To make these you will only need a handful of ingredients and about 30 minutes time. These make for a high protein, low carb food to have any time of day or night.

What you will need:

1 package of 99% fat free lean ground turkey breast meat

3 lean grass fed ground beef patties (lean meaning at least 93% fat free)

9 tbsp of egg whites liquid

Seasonings of your choice

1/4 cup of diced white onion or yellow onion

Organic ketchup

1/4 cup of whole wheat bread crumbs

3 tbsp Minced garlic or diced garlic

1/4 cup of chopped spinach leaves

_MG_9758  It’s important to use as close to fat free for your meats as possible. Turkey and chicken is a very lean meat so you can get 99% fat free usually, it costs more but is a healthier option. Beef on the other hand is a fattier meat so you will pay more for a high percentage of fat free. Usually you can get up to 94% or so and I always go with that. You can get ground beef but I already bought the hamburger patties so I used 3 of those (the fourth one was cooked for my dog).

Place all of your ingredients into a mixing bowl and heat your oven to 350 degrees. I also like to line two baking trays with aluminum foil and get those ready to go also.

I only use a small amount of whole wheat bread crumbs. I use enough to just bind it all together, but I warn to use very little. The more you use the higher the carbs and also the drier the meatballs will be.

You are going to make about 1 1/2 dozen meatballs with this recipe. You can also add any additional vegetables to your meatball mix – I added some spinach to get some greens into the meal.

I make my meatballs about 2 1/2 inches in diameter and that is a pretty good size. They cook easily all the way through and are big enough to have 2-3 and fill you up!

Time your stove for about 25 minutes and keep checking to see if they are completely cooked. Take one out and cut it in half to test it. Then let them sit out and cool.

Once they are done you can dust some Parmesan cheese on them, or make a small bowl of marinara sauce to dip them into. They are really great to get some more protein into your diet and also have something to add to your dinner dishes.
