Typically when I make meatballs I use either ground chicken or ground turkey, but recently I like to mix two types of ground meat to make one recipe and this week I used chicken and beef. Now I am not a red meat person really, maybe once a week I will have some and it’s either ground beef or filet mignon (if we go out to dinner I may sometimes get it or when we grill on the bbq), but adding it to meatball mix sure does give it amazing flavor.
To make my meatballs I grab a large mixing bowl and combine the following:
3/4 cup of Trader Joe’s Organic Bread Crumbs
1/2 diced white onion
1 cup of chopped spinach
Sea Salt & Pepper
3-4 tbsp of organic ketchup
1 whole egg
1 package of lean ground chicken (the lowest fat possible)
1 package of lean ground beef (again the lowest % of fat possible, usually 96% fat free)
2-3 dashes of garlic powder
I like to bake my meatballs in an oven which I preheat to 385 degrees and cook for about 30 minutes. I roll the meatball mix into large meatballs to make a dozen (12). I make them larger so that I can put 2 in a tupperware container with some vegetable and take with me for lunch. Two large meatballs is a good amount of lean meat for my lunch. I also love to bake meatballs to avoid having to fry in any oil. They came out super moist and delicious. If you’d like you can top with some grated cheese or shredded mozzarella for a bit of a meatball parm effect! Yummy.
