While it takes some time to perfect a homemade protein bar recipe it’s worth testing and trying it out in your kitchen. Not only does it save on the cost to buy protein bars in the store box load by box load, but you are also in a lot more control of the ingredients when you make them yourself. To make my own batch I had to try a few different times since, as some of you may or may not know, protein powder is challenging to work with. Sometimes your batch will come out super dry (my husband is my taste tester and a few of these came out like “card board” he said lol) so then I go back into the “lab” and make it again. Most of the time it is just a matter of adjusting the liquid amounts or ingredients to make the mixture more moist, but you also want to ensure the protein bars cook all the way through.
To make this batch of protein bars I used:
1 cup of NutriWhey Belgian Chocolate Protein Powder
1/4 cup of whole wheat pastry flour
2 extra large organic eggs
3 packets of stevia in the raw
1 small unsweetened organic apple sauce cup
1/4 cup of organic rolled oats
1/2 tbsp of pink Himalayan salt
3 tbsp of D’s Natural Fluffbutter
Spray coconut oil on baking pan
Mix all of your ingredients in a mixing bowl. Preheat your oven to 385 degrees and spray your baking sheet with coconut oil or extra virgin olive oil. Spread the mixture evenly across the entire pan and place into the oven.
Test your mixture with a tooth pick in the middle to ensure it has cooked all the way through. It will take around 20-25 minutes but your stove/oven may vary so check after around 20 minutes.
Once it is done it should look like this. Remember this is not CAKE it is a protein bar and it is not meant to be gooey and moist and fall apart, it is meant to be a bit harder but should not be really hard. Cut the bars up into squares and enjoy while still warm. If you want to have another one later pop it into the microwave for 10 seconds to warm it up and soften it a bit.
