Making a healthy dinner doesn’t have to take a ton of time or a lot of money either. Every night after work I make a fresh dinner for myself and my husband and when it comes to fish that is something I pick up on my ride home from work. I can’t cook fish unless I’ve bought it that day so it’s the most fresh and tastes delicious. I love all kinds of fish but lately I am a big fan of salmon, cod and flounder. I like to bake these in the oven and they come out flaky and so flavorful. I pick up my fish usually from Stop & Shop, they have a wide variety of wild caught fish and they also have these amazing filet with crab stuffing. I purchased 2 pieces of salmon 2 of flounder and 1 of cod.
To make this meal I put my oven on 400 degrees. I then sprayed a baking pan with coconut oil and put all the fish on there and used some fresh basil on top. I also did a little bit of paprika as well. Once the fish was in the oven I also made a mixtures of cut green squash and red bell peppers, drizzled with organic olive oil and some seasoning which I found at my local Home Goods. I love this flavor for baking vegetables in the oven. It’s by The Gourmet Collection Spice Blends and it is Roasted Garlic & Red Bell Pepper which works on almost all vegetables.
For the vegetables I put them in a baking tin and put them in the oven as well. Then I boiled a pot of water and made a bunch of green beans. I left them simmering for about 20 minutes and then transferred them into a bowl and marinated them with this awesome sun dried tomato from Trader Joe’s, some garlic powder and pink himalayn sea salt. Green beans are great for lunches and dinner and are one of my favorite green vegetables.
This meal was simple, easy and low carb. It is high in protein and I had enough left over for my vegetables for the rest of the week as left overs. What are some of your favorite fish dishes to make?
