Today was the first day I’ve been home and settled in over a week! We’ve been doing a bit of living out of suitcases; from our five day vacation in Miami Beach for our one year wedding anniversary, home for 2 days of which I worked both days, and then back on the road to Vermont for the weekend to celebrate a friend’s wedding. I love to travel, however that means when we get home a lot of the fridge must be cleaned out and I have to go grocery shopping to restock our fridge. I wanted to share with you what I picked up on my trip today to Trader Joe’s to hold us over for the work week ahead.
I am still following a ketogenic diet (high fat, moderate protein, low carb) though with a little less strictness. I am buying high fat foods and still reading my labels to ensure to find items that have low carbs and low sugar. I posted about this on my Instagram today when it came to salad dressing. For so long I never bought Caesar dressing or other creamy salad dressing for fear of it being so high in fat. What I’ve come to realize on a keto diet is that higher fat foods tend to have lower cars, or no carbs, and use a ton less sugar. For me this diet works because I don’t want a ton of sugar in my diet, and I don’t eat a ton of carbs anyway, but my weight has remained consistent on the high fat, low carb diet for over 2 months now. I am always between 108-111 now doing this diet and feel so much better than when I had some carbs in my diet. I never crave carbs and never have any kind of sugar crashing.
For meats/protein I picked up the items above; smoked turkey breast slices, pre made and ready to serve chicken breasts and chicken strips, shaved beef steak ground beef and chicken sausage links. All of these are high protein, zero to low carb and easy to make for lunch and dinners as well as breakfast. I still eat pretty high amounts of protein to keep lean muscle but I am learning to eat a bit less in order to remain in a ketosis state.
For healthy fats I got some raw almonds, avocados, black olives and Gorgonzola cheese. I also have tons of cheese strings and mozzarella shredded cheese to put on food or eat as snacks. Again, it’s all about healthy fats and adding them into your meals.
For vegetables I stick to green ones or leafy greens like spinach, kale and romaine lettuce. I also love brussel sprouts, asparagus, sugar snap peas and brocolli and kale slaw. All of these are fine on the keto diet and taste delicious grilled with some olive oil and seasonings or with some Bragg’s Liquid Aminos which I love for stir fry flavor.
To make nightly tacos or chili I use some ground beef or ground turkey and then add in a packet of Trader Joe’s taco mix, some black olives and diced tomatoes. Once it is complete I put some shredded mozzarella cheese and enjoy! This is also great for a lunch meal prep option. I love chili for lunch and dinner and it’s usually so filling I eat it in a huge bowl and am full for hours.
Finally one of my favorite new salads to make is a grilled chicken mix with black olives, cucumber, red bell pepper, Gorgonzola cheese and Trader Joe’s Goddess dressing. Again, don’t be afraid of a high fat creamy dressing, this has less than 1 gram of carbs/sugars which is what is most important. You’d be shocked how many low fat salad dressings are loaded with sugar. I like to eat salads for lunch or even for dinner if I am in no mood to cook. This is a filling salad and I love how delicious it tastes. I am a big fan of this dressing and now pick it up every time I go. It is also great for dipping celery or sugar snap peas as a snack.
Overall this bill was $110 and will get us through the work week. I also got some eggs for breakfast, some canned crab for a crab salad, coconut oil spray for grilling, some soups (I am battling a head cold currently and need soup asap!) and popcorn for a snack (yes its carbs but a girl need some form of a snack once in awhile).
Now it’s time to go eat my salad, make a pot of soup and enjoy the rest of my Sunday before work starts up again tomorrow. Hopefully I can shake this head cold, I’ve taken some Nyquil and will be curling up on my couch to rest my head with a box of Kleenex nearby.
