If you are like me you grew up in a household that made Sunday a weekly tradition of glutenous eating and filled with pastas and meatballs. Today I don’t really eat much pasta (or any carbs for that matter) but I do love me some delicious meatballs. As I have gotten better and better at meal prepping I’ve developed some go-to recipes that allow me to eat healthy without a lot of carbs. I have been following a low carb/ketogenic diet for a few months now so most of my meals do not have many carbs in them at all, and if they do the carbs come from vegetables – not from flour, grains or wheat products. Today I fired up my oven to make a batch of lean, high protein, carbless meatballs and wanted to share the recipe with you to make for yourself.
To make this recipe you will need the following pictured ingredients:
- 1 package of grass fed beef
- 1 package of lean ground turkey
- 1/4 chopped white or yellow onion
- 1/2 chopped red bell pepper
- 1/4 cup of shredded mozzarella cheese
- 3 tbsp of organic ketchup
- 1 tsp of minced organic garlic
- 3 tbsp of egg whites or 1 egg with white only
- Oh My Spice Garlic Lover seasoning to taste
- Pink Himalayan sea salt to taste
- 2 baking trays
Steps and cooking instructions:
- Preheat your oven to 400 degrees and get your two baking trays layed out and ready
- chop up your onion and red pepper on a cutting board and transfer to a large mixing bowl
- in the mixing bowl put all of your ingredients and mash them up real good with your bare hands
- roll the mixture into small meatballs and place on the tray with some space in between each
- top them all with an extra dusting of the Oh My Spice garlic lovers seasoning
- let cook for 25 minutes
Place your meatballs in the oven and keep an eye on them. I like mine to be bake really well and a little crispy on the outside. Once they are finished take them out and let them cool before transferring them to a tray for serving. I love adding crunchy things like peppers and onions to my meatballs. You can also add other vegetables like asparagus or spinach as well to get some more veggies in there!
Once you are ready to serve you can add some mozzarella cheese on top and melt that and also use a pasta sauce of your choice. I have been loving the Rao’s pasta sauces which taste very authentic and have amazing flavor! I got them at the Stop & Shop near me and they are likely in most major grocery stores.
Meatballs are great to make in a meal prep because you can eat them cold or hot. Sometimes when I am in a rush I just grab two or three and eat them on the go. I love them as a snack option or even as a meal. I just mash them up in a bowl and microwave for 2 minutes and then enjoy. These use no breadcrumbs so they are a high protein and low carb food option.
To store these I buy the tin foil containers and then just put them in the fridge. These are so good they never last longer than two days! I got these at a food store near by but you can also get them online. These make storage and clean up really easy! Let me know if you make these and if you enjoy them as much as I do!
