I posted this meatball recipe on my Instagram and Facebook page and many of you wanted me to share the recipe. To be honest I make this recipe all the time and only vary a few ingredients, but what is great about making meatballs is they are:
- quick to make
- you can add tons of vegetables to make it even more filling and nutritious
- you can make them with no bread crumbs
- they are high in protein
- they are low in carbs
- depending on the % of fat you get of the ground beef you can make them low fat or moderate fat
- they make a great snack food, grab and go meal or appetizer
Ingredients used:
- 2 packages of 85% lean ground beef (grass fed if you can find it)
- 1/8 diced white onion
- 1 tsp of minced garlic
- Oh My Spice Italian seasoning
- Pink Himalayan sea salt
- 1 whole egg
- marinara sauce for dipping
- 1 small handful of shredded full fat mozzarella cheese
- romano parmesan cheese to top and bake
To Make:
- preheat oven to 385 degrees
- mix all ingredients together and mash well with hands
- roll into medium sized meat balls
- spray a baking sheet with coconut oil spray
- place in oven for 25 minutes
- heat up marinara sauce and put in a dipping bowl
- remove, let cool and enjoy!
When you make these you can enjoy hot or even cold. I like to eat these as a snack or full meal. They are great for ketogenic diets because they are low in carbs and moderate in protein and fat. You can chop up spinach or asparagus and add to your mix for a full meal with vegetables. They are always a hit and great for Sunday football games.
For dipping you can put premade marinara sauce like Rao’s which is my favorite jar brand or make your own from scratch using crushed tomato, seasonings, garlic and onion. These will be baked so you won’t get the extra calories from using and frying with oils. You can even put these in a slow cooker and make them that way also!
